Ingredients
3.5 oz (100 g) asparagus, ends trimmed and cut on an angle into 3 pieces
3.5 oz (100 g) snow peas, top and tailed, then halved
1 small head of broccoli, cut into florets
2.65 oz (75 g) green beans, top and tailed, then halved
6 oz (170 g) frozen edamame beans, defrosted
2.6 oz (75 g) mung bean sprouts
A good handful of snow pea tendrils or alfalfa
2 spring onions, finely sliced
2 small radish bulbs, finely sliced
1 tbsp of sesame seeds or pepitas
Sesame dressing
1/3 cup rice vinegar
1 garlic clove, crushed
1 tbsp white miso
1/3 cup tamari
1/3 cup avocado oil
1 tbsp sesame oil
Preparation
Make the dressing by whisking all the ingredients together in a small bowl.
Prepare an ice bath by filling a large bowl with water and adding ice cubes
Bring a large saucepan of salted water to the boil, then add the green vegetables. Cook for 1-2 minutes, then drain and refresh in the ice bath.
Strain the chilled vegetables, then place in a large salad bowl. Add the remaining ingredients, then drizzle with the dressing. You may not need all of it, so add to your liking.
Toss well to coat, then season with salt and pepper.
