Decadent Chocolate Mousse

Ingredients

3.5 oz bittersweet or dark chocolate chips

12oz silken soft tofu, drained, at room temperature

2 tbsp unsweetened cocoa powder (preferably Dutch processed)

1/4 tsp instant coffee or expresso powder

1/4 tsp kosher salt (or 1/8 tsp sea salt)

2.5 tbsp pure maple syrup

1 tsp pure vanilla extract

8 oz fresh seasonal fruit

Preparation

Melt the chocolate chips either in the microwave in 20 second intervals until melted


In a blender, break up the drained tofu and blend until pureed. Add the melted chocolate, cocoa powder, coffee, salt, maple syrup and vanilla extract and blend again until smooth and uniform.


Transfer the mouse to a wide container and chill in the freezer for 20 minutes or in the fridge for about an hour, until it thickens and firms up.


Divide amount individual bowls and top with your choice of seasonal fruit.
