Rhubarb, Apple & Ginger Compote

Ingredients
250 g (8.8 oz) rhubarb, trimmed and chopped
250 g (8.8 oz) apples, peeled, cored and chopped
1 tsp vanilla extract
3 cm piece of fresh root ginger, peeled and finely grated
squeeze of lemon
1/4 tsp cinnamon
2 star anise (optional)
2 tbsp maple syrup or sweetener of choice (optional)
Step 1
Place all the ingredients, except the maple syrup in a large saucepan, along with 1 tablespoon of water. Cover loosely with a lid and simmer over a low heat for 20-30 minutes until the rhubarb and apple have broken down - you will need to stir occasionally and perhaps add a drop more water if it’s getting too dry or sticking.
Step 2
Leave to cool slightly, then remove the star anise. Add the maple syrup or your sweetener to taste and mix well. This will keep for up to 2 weeks in the fridge.
Notes
The lemon keeps the rhubarb red.
Pair with granola or chia or have as a snack or dessert stirred with yoghurt of your choice.
